Plant-based Prawn & Avocado Cocktail
This plant-based prawn cocktail is a real crowd pleaser. An impressive starter at your next dinner party, or enjoy as a delicious and satisfying lunch. The addition of avocado makes this super creamy and fresh.
If you can't find plant-based prawns in your local supermarket you can omit them - it still tastes great. The jackfruit can be found in a tin in your local supermarket. Jackfruit is full of vitamin A, B and C, plus fibre and potassium. It's great for eye health and keeping your heart healthy too! The fleshy texture of jackfruit makes it a great substitute for fish, and it also makes a wonderful BBQ 'pulled pork' - so you definitley want to give jackfruit a try!

Ingredients
Serves 2
- 2 Tbsp Olive Oil
- 1 Clove Garlic, chopped
- 12 Vegan Prawns (serves 2)
- 1/2 Sheet toasted Nori
- 1 Cup Jackfruit in brine, strained
- 1/2 Red Onion, chopped
- 1/2 Cup plant-based Mayonnaise
- Salt & Pepper
- 1 Lemon, juiced
- 2 Ripe Tomatoes, seeds removed, tomatoes chopped
- 2 Avocado, chopped
- Salt & Pepper to taste
- 1 Lime, juiced
Method
1. Add your olive oil to a heated pan, then add the chopped garlic and the vegan prawns. Cook till the prawns are golden, then set them aside.
2. Chop your nori and add to a mixing bowl, along with your jackfruit, red onion, mayonnaise, the juice of a lemon, and salt & pepper. Mix well to combine.
3. in a seperate bowl, add your chopped tomato and avocado, lime juice and a little salt & pepper to season. Mix well.
4. Time to assemble! You can use a mould or layer into a small bowl. First add a layer of the tomato and avocado mixture, then your jackfruit mixture, then finally top with your cooked prawns! And enjoy!
