Scrambled Tofu & Saucy Mushrooms

Scrambled tofu is the perfect dish for when you're craving a plate of scrambled eggs. And this Scrambled Tofu recipe from Sarah of Vegan Travel Diaries, does not disappoint. Served with a side of Saucy Mushrooms - it's a nutritional powerhouse the whole family will love!

Tofu is full of calcium and protein, while mushrooms are a great source of vitamin D - this breakfast is sure to make you happy!

Ingredients

  • Olive Oil
  • ½ Onion
  • 450g Firm Tofu
  • 1 tsp of Turmeric, Salt & Paprika
  • 100ml Soy Milk
  • ½ cup Nutritional Yeast
  • 1 cup of melting plant-based cheese

For the Mushrooms

  • Olive Oil
  • ½ Onion
  • 2 cups Mushrooms
  • 1 tsp Salt & All Purpose seasoning
  • 1 tsp Sweet Soy Sauce
  • 1 tbsp Rice Syrup
  • 1 tsp Corn Starch mix w 1tsp Water


Method

1. Heat your olive oil in a pan and saute your onion.

2. Crumble the tofu into the pan with your hands, add the paprika, turmeric and salt & pepper. Stir Well. 

3. Add the soy milk (or milk of your choice) and nutritional yeast and continue to stir to combine. You can also add some cheese at this stage too for extra cheesey tofu scramble.

4. Meanwhile, heat some oil in seperate pan, and fry off your remaining onion. 

5. Add in your mushrom and simmer for 2 minutes, then add salt and all-purpose seasoning. 

6. Finally add in your soy sauce, rice syrup and cornstarch/water mixture and stir well to combine. A beautiful sauce will start to thicken. 

7. Serve your mushrooms and tofu alone or as part of a bigger "Full-English" vegan style breakfast!
