Blackbean, Zucchini & Corn Fritters

This is a cracking brekky or brunch stack that everyone loves. Super easy to make, these fritters are packed full of nutrition and flavour. The fritters in this image are seved with some leftover Sri Lankan Kale & Coconut Mix (Kale Mallung recipe here). 

Ingredients

  • 1 can of Black Beans (400g)
  • 1 can of Corn Kernels (400g)
  • 2 Zucchini’s (grated)
  • 1 Onion finely chopped
  • 1 finely chopped Chilli (optional)
  • 1 ½ tsp of Cumin powder
  • ½ tsp Turmeric &
  • ½ tsp Baking Powder
  • 1 ½ cup Besan Flour
  • Salt & Pepper to taste
  • Olive Oil


Method

1. Chop onions into thin strips.

2. Mix all ingredients together in a large bowl and let sit for 20 mins to absorb flavour

3. Heat Olive Oil in a fry pan over medium to high heat

4. Form small fritters and cook each side for 5 minutes until golden brown on each side

5. Stack & garnish with fresh herbs and lemon juice.
